El Guatal was born from a piece of Mexican farmland, a grandmother's recipes, and one woman's lifelong dream. Every plate tells that story.

The land that fed a community
In Mexico, *el guatal* means uncultivated land covered in plants — wild, generous earth where a whole community gathered for fruit, vegetables, cattle, and water. It's that spirit of open-handed abundance that founder Tania Palafox carried with her, all the way to St. Peters, Missouri.

What her grandmother taught her
Growing up on that farmland, Tania learned to cook at the side of her grandmother, Maria Herlinda Romero — ingredients picked fresh from the soil, recipes passed down with patience and love. Even as a little girl, she knew she wanted to share that food with the world.

A tribute to Luis and Maria
Opening El Guatal was Tania's way of honoring her grandparents, Luis Alonso Carrillo and Maria Herlinda Romero — the two people who showed her that the best food is made with love and shared generously. Every dish on the menu is a quiet thank-you to them.

The table is always open
First-timers become regulars, and regulars feel like family — that's just how it goes here. With a dining room, a bar, and a drive-thru open seven days a week, El Guatal meets the community wherever they are, just like that farmland always did.
