Guatal (huatal) means uncultivated land covered in plants. The CEO/founder of El Guatal (Tania Palafox) grew up on a farmland that was named “El Guatal”, it was the land where her entire community went to shop for fruit vegetables, cattle, water, etc.; she grew up walking that land dreaming that one day she would open her own restaurant since her grandma taught her the family recipes, all freshly pick from El Guatal.
She always loved how her family’s land served the community and cooked for them too. With this restaurant, she pays tribute to her grandparents (Luis Alonso Carrillo, Maria Herlinda Romero) and continues to serve communities with not only fresh food but food made with love.
